To the nose it expresses complex and fine notes of freshly cut grass, artichokes and unripe tomatoes. At the taste it’s fairly bitter and spicy with herbaceous hints of artichokes and legumes. Overall sweetness, spiciness, bitterness and freshness are in perfect equilibrium. It is excellent on legumes, fish, bruschetta, grilled vegetables, vegetable and legume soup, and fresh cheeses.
