The "Officina di Terra" is a young farm owned by Gerlando Fiorica in the province of Agrigento, in the municipality of Realmonte, 1 km from the Scala dei Turchi, a UNESCO World Heritage site in Sicily. Made of Nocellara del Belice and Biancolilla, the two most iconic olive cultivars of Sicily, thes olive oil is certified IGP Sicilia and it's from organic farming. The particular
terrain of the southern coast Sicilian, its exposure, and the unique
microclimate allow for a high quality olive oil. In addition, pesticides and
chemical fertilizers are banned in the company. The harvest is done by hand and only when
the olives reach optimal ripeness. The organic extra virgin olive oil produced
is obtained only and exclusively from the farm’s olives. The Noce Lilla EVOO
appears at the sight of a beautiful color intense golden yellow with delicate
green veins, clear. The nose opens wide and enveloping, rich in fruity hints of
ripe tomato, banana and white apple, flanked by balsamic notes of basil and
mint. Elegant and full of character in the mouth, it releases vegetable tones
of field lettuce. Bitter and spicy present and well expressed, with a sweet
finish in relief. Ideal on seafood appetizers, beans, salads, steamed vegetables,
roasted potatoes, chickpea soups, salmon, shellfish au gratin, and grilled
chicken.
