Vetrano Colline Salernitane DOP is a medium fruity Extra Virgin Olive Oil with a beautiful, intense and clear golden color and a very low acidity level. The scent has an opening that is persistent and encircling, rich and full, fruity notes of unripe tomatoes, and closes with elegant hints of dried fruit. The flavor is complex and unique with vegetable tones of lettuce, wild chicory and artichokes. It’s also enriched by spicy notes of black pepper and medicinal herbs as well as hints of sage, mint and marjoram, with the presence of balanced bitter and spicy flavors. The olive oil is excellent with legume appetizers, marinated sea bass, rice salads, steamed shellfish, pureed peas, first courses with shellfish, fish al cartoccio (fish baked in foil or parchment paper), grilled white meats and medium-aged cheeses.
Area
Like the grapes in a fine wine, it’s the olives that impart a great oil’s distinctive character. Vetrano Extra Virgin Olive Oil is made exclusively from olives that grow five hundred meters above sea level, in the foothills of the Alburni mountains, near the Greek Temples of Paestum and the famed Amalfi coast. The Colline Salernitane DOP EVOO has ancient roots, deriving from indigenous varieties that have always been present on site: it is easy, in fact, to run into a thousand years old olive tree of great size, walking through these beautiful land.
