Colli Etruschi Extra Virgin Olive Oil Classico from Lazio is created from same-day, continuous cycle, first-cold pressing oil of quality Caninese olives, carefully supervised by agronomist Nicola Fazzi of the Colli Etruschi Cooperative in the Etruscan town of Blera. Visually, the oil has a beautiful, intense green color with clear, golden-yellow reflections. Its aroma opens as full and powerful, characterized by elegant, fresh notes of grass and is reminiscent of artichoke, thistle, anise, rosemary and mint. Its taste is complex and very fine, full of rich vegetable flavor with traces of chicory and lettuce. Marked by well-balanced bitter and spicy notes, it has a sweet almond finish. It’s excellent on salads, steamed shellfish, seafood appetizers, vegetable purees, mushroom dishes, roasted fish, grilled lamb and stretched-curd cheeses.
