Acetum Balsamic Vinegar of Modena is a genuine product made only from grape must and wine vinegar and certified by the IGP European Designation. This is a four leaf balsamic vinegar, superbly lush and intense. Syrupy with complex flavors and heady aroma. Suggested for strawberries, ice-cream, Parmigiano Reggiano cheese, grilled chicken, and exclusive recipes.

 

In a characteristic 250 ML (8.5 fl oz) flask shape bottle (Fiaschetta Rustica), closed with cork and green ribbon, Acetum Balsamic Vinegar of Modena is made following the rules of the Consortium of Balsamic Vinegar of Modena, which provides a selection of the ingredients and controls of all production phases.

  

Acetum embraced the philosophy of AIB (the Italian Balsamic Tasters Association) which foresee a classification of products in four quality categories, based both on sensory and chemical analysis, applied to the entire production of each manufacturer, and assigns a variable number of vine leaves (one through four) to each product in relation to its characteristics. Each bottle carries the 'leaves' on a special colored strip which is printed on its label: a simple and clear indication which tells consumers the quality level of product they are going to buy.

 

Acetum, specialized in manufacturing quality Balsamic Vinegar of Modena, is based in Cavezzo, in the historical building of the Motta Cellars. Established in 1906, the cellars were totally restructured to host the vinegar production. The ageing areas, fully rebuilt with barrels and casks of different sizes and types of wood, are at the top of the capacity in the industry.
