Olivastra Seggianese:

Fruity Flavor: Light

Region: Montenero d’Orcia, Tuscany.

Variety of olives: 100% Olivastra.

Appearance: clear and filtered.

Color: golden yellow.

Fragrance: clear scent of olives, fresh and delicate, typical of Olivastra, strong hints of vegetable with clear hints of artichoke and slight hints of banana.

Taste: delicate, well-rounded, with well-balanced fruity and herbaceous flavours, very light and elegant. Initially with sweet sensation on the palate which develops into a medium peppery intensity. Beautifully harmonious and elegant complexity with a spicy and fresh finish.

Use: fresh on fish, on strong-flavored salads, grilled chicory, excellent as raw artichoke dip, for home-made mayonnaise, oil-preserved vegetables and baking

Le Trebbiane

Fruity Flavor: Medium

Variety of olives: Frantoio 40%, Moraiolo 10%, Leccino 40%, Olivastra 10%.

Color: green, with hints of gold.

Appearance: clear and filtered.

Fragrance: fresh and clean fruity aroma, rich in grassy scents with predominance of artichoke, elegant notes of fruit and spices.

Taste: ample and harmonious, with herbaceous hints of artichoke, blossoms and fruit, extremely complex. Medium intensity of harmonious bitter and peppery features, a rich finish with a long spicy persistence.

Use: fresh in soups, on vegetables, legumes, bruschetta, pinzimonio, green salads, medium-flavoured fish, roast meats, etc.

Villa Magra dei Franci

Fruity Flavor: Intense

Variety of olives: 50% Frantoio “Correggiolo”, 35% Moraiolo, 15% Leccino.

Appearance: clear and filtered.

Color: green with hints of gold

Fragrance: intense fruity aroma, opening to the nose with elegant and strong aroma of green olive, fresh and pungent grassy scent with hints of artichoke and cardoon, predominance of elegant notes of roasted coffee.

Taste: intensely fruity, fresh, grassy, pungent, complex. Decisively bitter and peppery, harmonious, elegant and well structured, with a fresh rich finish of spicy grass.

Use: fresh in soups, on boiled or raw vegetables, bruschetta, pinzimonio, red meats, tomato salads, boiled potatoes or onions, with plain rice or pasta and well-aged cheeses.
