Gnuccune Aristufate
Ingredients
1 pound mixed ground meat (beef and pork)
1 cup extra virgin olive oil, plus extra
salt and pepper
1 cup red wine
2 1/2 cups tomato sauce
1 pound rigatoni
1 cup grated Parmigiano-Reggiano and pecorino
1/2 pound mozzarella, chilled and cubed
basil leaves for garnish
Preparation
Preheat the oven to 400 degree. In a skillet, brown the ground meat in the olive oil and a pinch of salt and pepper. To help finish browning the meat, add the red wine and cook until it evaporates. Combine the tomato sauce with the meat and cook over low heat covered. The sauce should not cook for too long.
Meanwhile, bring a large pot of water to a boil. Add salt and the rigatoni and cook until almost al dente (it will finish cooking in the oven), then drain. Toss the pasta with the sauce and a few spoonfuls of the cheese. Brush the bottom of a baking dish with olive oil and transfer the dressed pasta to the dish. Top with the cubed mozzarella and sprinkle with the remaining cheese. Transfer to the oven to bake until the mozzarella is well melted and forms a kind of crust on the surface, about 20 minutes. Serve warm garnished with basil leaves. Serves 6
