Almond Croquant di Mende

Ingredients

2 1/3 cups flour
1 tablespoon baking powder
½ cup almond meal
¾ cup plus 1 tablespoon sugar
1 teaspoon vanilla sugar
pinch of salt
1 whole egg
3 egg yolks, divided
2/3 cup almonds
2 tablespoons milk

Preparation

Preheat the oven to 350°. Sift the flour over a bowl, add the baking powder, almond meal, sugars and salt and mix well to combine. Create a hole in the center of the mixture, place the whole egg and 2 egg yolks into it and mix well to combine. Add the almonds and work the dough until it’s rather compact. This step can also be done with a food processor.

Divide the dough into 4 parts, shaping each one into a roll about 1 inch wide and 2/3 inch high. Arrange the rolls on a baking sheet lined with parchment paper. Whisk together the remaining egg yolk and the milk and brush the mixture over the rolls. Transfer to the oven to bake for 20 minutes. Remove from the oven and set aside to cool, then cut each roll diagonally. Transfer back to the oven to bake for 10 more minutes, until firm and golden.
