Acquacotta alla Viterbese

Serves 4

Ingredients:
7 oz of cubed potato
1 lb of mixed wild greens
4 eggs
4 slides of bread, aged one day
2 garlic cloves
1 red onion
2 oz of pacetta in cubes o lard
2 quarter of water
pepper
salt

Preparation:
Place in a pot the water, greens, onion, garlic, pancetta and the potato and bring to boil. Add salt  and cook for an additional 15 minutes. Place the four eggs in and let it cook for one more minute.
Serving:
Take four bowls and in each one of them place a slice of the aged bread and one egg. Pour on it one quarter of the broth, add the greens and finish with pecorino cheese, fresh ground pepper and extra virgin olive oil.
